Vietnamese Noodles with London Broil and Shrimp Vietnamese Noodles with London Broil
tried and true
Sauce:
Soy sauce (about 1/3 cup or a little more)
Beef consommé (about ¼ cup)
Water
Chopped garlic
Hoisin sauce – about 2-3 TBS.
Touch of toasted sesame oil
There are many noodles available in an Asian market - it's just a matter of experimenting.
Grilled shrimp or caramilize in skillet until JUST done
London broil, sliced very thin across grain (this is a perfect way to use up left-over London broil or flank steak)
Cook pasta. Heat the sauce ingredients until warmed. Toss everything together and top with cilantro, spring onions, and serve with lime slices. The combination of cilantro, soy sauce, and lime has become quite addictive!
Cook's Notes: - You can add a touch of garlic chili paste, or finely sliced red chilies. You can also top the dish with finely julienned red pepper and carrots. If you can refine the broth so it tastes more like a soup you can serve this in a large bowl as a very satisfying soup. There are lots of additions you can make, i.e., mushrooms, zucchini, etc.
