About 4 cups cooked cold rice
1 green bell pepper
1 large white onion
1 can Rotel
hot sauce
ground cumin
Chop up bell pepper and onion and saute in a skillet large enough to hold everything. Once cooked (I like mine a bit caramilized) add the rice, hot sauce, cumin, and can of Rotel. Heat thoroughly.

I made this today but I added some ground turkey and some left-over shredded chicken - it was yum!!

No problem!!! Rotel is a canned product. It is very much like a pico de gallo (salsa versus pico de gallo is salsa is usually smooth or somewhat chunky and pico de gallo is everything cut into chunks) - that is found with the canned tomatoes and sometimes in the Mexican section. For some reason in like 95% of grocery stores Rotel will be on the top shelf - there are several flavors but I get the one with cilantro, lime, and onion. VERY good and has some heat to it. Rotel is also good mixed with some velveeta in a crockpot, maybe some cooked Italian sausage or just cooked hamburger, and heated until melted.
Oh wait - you just asked what Rotel was :oops:
